Benito Hernández Cortés Biography

Benito Hernández’s love for cooking was born in 2013, when he traveled to the United States in search of new opportunities and discovered Japanese cuisine, specializing in techniques such as tuna carving (ronqueo), now a distinctive hallmark of his style.

In 2018, he returned to Mexico to open his own restaurant, Sensei Sushi Express, where he developed original recipes and furthered his leadership, operations, and customer service experience. He later served as Head Sushi Chef and Sushi Chef in renowned projects, including Conrad Punta de Mita, leading the preparation of dishes for formal and large-scale events, and innovating with new sauces and culinary concepts.

With over 10 years of experience as a chef specializing in Japanese cuisine, he has worked in different states across Mexico, enriching his gastronomic vision. He is currently part of Fonsini Restaurant Group at ParrotFish Punta de Mita, where he continues to refine techniques and flavors, guided by his love for the culinary arts.

With a deep-rooted essence rooted in the world of mixology, Donat Ávalos is an outstanding expert in the operation of bars and a skilled mixologist.

Boasting 15 years of experience in the tourism industry, he stood out in his field. Starting as a bartender in Nayarit and the Riviera Maya, he established himself as a Bar Manager in 2017 in Riviera Nayarit and Puerto Vallarta, where he continues to reap success.

Among his most outstanding recognitions, his professional courses in Mixology and Enology, Mixology Trends clinics, and the renowned Tequila Master of Academia Tequila Patrón stand out.
